Never thought I'd be eating turkey sausage but my daughter-in-law changed my mind.
Turkey sausage? Really?
I use Eckrich skinless smoked turkey sausage. When making the recipe below, I save a little piece of the sausage to chop up with some green onions, and cook with scrambled eggs.
Easy Turkey Sausage and Veggies
Ingredients
Suggested ingredients. Feel free to get creative with your veggies
1-2 Tablespoons canola oil
1 Tablespoon butter (optional - just adds yummy)
1 package Eckrich Skinless Smoked Turkey Sausage, cut up
1 medium onion, diced
1 zucchini, halved and sliced
1 yellow squash, halved and sliced
¼ green cabbage, shredded
Garlic salt, pepper to taste
Directions
Heat oil (and butter, if using) in large skillet.
Add sausage and brown 1-2 minutes.
Add veggies and saute to desired doneness. (Add a lid for faster cooking or if you like softer veggies).
Season with garlic salt, pepper, or other spice of your choice.
Enjoy! It's super simple, but oh so delicious.
