I love damndelicious.net. The majority of the recipes I've made from this site quickly become family favorites.
Today I'll tell you about my take on Zucchini Lasagna Roll Ups - Damn Delicious. There is absolutely nothing wrong with Chungah's recipe. I'm the problem. I'm not able to slice the zucchini thin enough to roll it up. You can use the link to see the recipe. I'll just tell you about my experience here and the changes I made to suit me. (BTW - these are not affiliate links. I gain nothing by you clicking on them except joy that you might find a new recipe you really, really like).
I can't slice the zucchini thin enough to roll up, but I do get it as thin as my limited skills allow and layer it in a baking dish with the ricotta mixture rather than rolling it.
I use ground beef instead of Italian sausage because Italian sausage bothers my husband's stomach. It's still super delicious.
I have used dried basil instead of fresh if I forget to buy it or it's not summertime, when the basil and zucchini compete to see who can take over most of my garden. Zucchini always wins, but dang it - basil never stops trying.
That's it! Besides being totally delicious, you don't get that disgusting feeling in your gut like when you eat lasagna with pasta. It's also yummy leftover.
